Baked Coconut Eggplant

Ingredients:

  • 4 eggplants
  • 2 big onions
  • 3 garlic cloves
  • 200ml coconut cream
  • 2 400g-cans cut tomato
  • cinnamon
  • chilli
  • salt and pepper

How to:

Step 1: Cut the eggplant into small slices and start frying them from both sides in a pan until they are brownish.

Step 2: In the meanwhile cut the onions and put them into a pot and start boiling them with olive oil until they start to get transparent (ca. 5 minutes).

Step 3: Add the garlic cloves, the coconut cream, the tomatos and a table spoon of cinnamon and a table spoon of chilli to the onions. Add salt and pepper until you like the taste. You can add coriander if you want.

Step 4: Take a baking dish, put 1 third of the onion stir into it, add a layer of fried eggplants. Keep on layering onions and eggplants until the last layer finishes with the onion stir.

Step 5: Put the baking dish into the oven for 25 minutes.
