Baked Pepper Cashew Pasta
Duration: 30min cooking/ 10min preparing (with a lot of time for doing other stuff in between!)
Money: 2,10€ per person (for 2 big portions)
Ingredients:
- 3 red peppers
- 3 garlic cloves
- 1 white onion
- 200g of cashew nuts
- green spices (anything you have handy, can be basil, oregano, etc.)
- chilli powder
- salt and pepper
- 300g pasta (spaghetti)
How to:
Step 1: Put the peppers on a baking dish and put them without oil 15 mins. into a 230 degree oven.
Step 2: After 15 minutes of cooking, include unpealed garlic cloves and the onion cut into 8 big pieces, to the baking dish. Bake it another 15 mins. (That makes 30 mins. in total for the pepper.)
Step 3: In the meanwhile take 50g of the cashew nuts out of the bag and toast them without oil in a frying pan. Take care that they don't burn (like they did a little bit on my photo).
Step 4: Also in the meanwhile, start to cook the pasta aldente in hot water.
Step 5: Take the pepper, the garlic and the onion out of the oven, peel the burnt part of the pepper skin off, and pull the seeds of the inside of the pepper out. (That will go really easily now that the pepper is baked.) Take the garlic from its peel and remove the peel from the onion. Put those three things, each a teaspoon of chilli, salt, pepper and green spices and the resting 150g of the cashew nuts into a blender. Mix everything until it's creamy.
Step 6: Heat the pasta and the sauce in the remaining noodle pot without the water until everything is warm. Serve the dish with the toasted cashew nuts on top and (to make it look good) together with some green herbs, uncooked spinash leaves or salad.

Tips:
You don't really have to care for the pepper while they are inside the oven. As lazy cook as I am, I did a couple of other not cooking-related things while they cooked. The whole dish is extremely easy.
