Fried Veggie Spring Salad

Duration: 15 min whole dish
Money: 2,40€ per person (for 2 portions)

Ingredients:

for the dressing:

  • 2 table spoons soy sauce
  • 2 table spoons olive oil
  • 2 table spoons vinegar
  • salt
  • pepper

for the salad:

  • a package of lettuce
  • cherry tomatoes
  • 1 avocado
  • 6 big mushrooms
  • a handful of flat beans

How to:

Step 1: Cut the mushrooms and the flat beans. Season both with salt and pepper. Fry them in seperate pans until the mushrooms are golden and until the beans skin starts to change!

Step 2: Cut the tomatoes and the avocado and put them on top of the salad.

Step 3: Mix all ingredients for the dressing in a bowl and put it on top of the salad mix.

Step 4: Garnish the salad as in the photo.

Tips:
You can decorate the dish with beautiful red chilli threads. :) You can buy them at spice shops.

The bread is simple bread toasted in a pan, together with homemade herb margerine. I bought the spice mix in the same spice shop.
