Peanut Asian Veggie Plate

Ingredients:
for the sauce:
- 3 garlic cloves
- 4 table spoons peanut butter
- 2 table spoons apple cider vinegar
- 2 table spoons soy sauce
- 1 thumb of ginger
- 150 ml water
for the rest:
- basmati rice for 4 persons
- 1 pepper
- 1 brokkoli
- a handful green beans
- 4 carrots
- salt and pepper
- 1 bush of coriander
- 1/2 lime
- peanut crumbles
How to:
Step 1: Mix the ingredients for the sauce in a blender together, so the sauce becomes very smooth. (You can add chilli if it's not hot enough through the garlic!)
Step 2: Put the brokkoli into a pan an fry it 5 minutes with olive oil. Then add the carrots, pepper (cut in thin slices) and beans to the pan and fry it all together more 5 minutes.
Step 3: Add the peanut sauce into the pan, and fry it more 2 minutes until the sauce is heated up. Add salt and pepper and optionally other seasoning.
Step 4: Cook the rice in the meanwhile.
Step 5: Add everything together on a plate (like in the photo). Add the peanut crumbles and the coriander on top as decoration. Then spread the juice of 1/2 lime onto the whole dish.

Tips:
If you prefer your veggies to be more cooked, keep them longer in the pan. I personally like it when they are still quite biteable!
