Sour No Mayo Potatoe Salad

Duration: 30min cooking/preparing
Money: 1,70€ per person (for 4 portions)

Ingredients:

  • 12 small or 6 big potatoes
  • 2 big white onions
  • 5 table spoons vinagre (e.g. white wine)
  • 1/2 tea spoon of sugar
  • 200g half olives (no stones)
  • 2 table spoons of capers + 2 table spoons of caper liquid
  • 1 piece of garlic
  • 6 table spoons of olive oil
  • 6 table spoons of water
  • 1 bush of parsley
  • salt and pepper

How to:

Step 1: Cook the potatoes until you can pass through them with a fork. Let them cool and cut them into quarters.

Step 2: Braise onion slices with vinegar and sugar for 10 minutes. Let them cool down, covered.

Step 3: Mix the potatoes and the onions with all the other ingredients. Season with salt and pepper.

Tips:
Use small potatoes, its optically nicer to cut them into triangles.
